Ingredients
  

For the Base
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
For the Topping
  • 1 cup cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed fresh fruit such as strawberries, blueberries, and kiwi

Method
 

Make the Base
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet mixture, mixing until combined.
  5. Drop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper, spacing them a few inches apart.
  6. Bake for 10-12 minutes, or until the edges are lightly golden. Remove from the oven and allow to cool completely.
Prepare the Topping
  1. In another bowl, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Once the cookie bases have cooled, spread a generous layer of the cream cheese mixture on each cookie.
  3. Top the cream cheese layer with a variety of mixed fresh fruit.
  4. Serve immediately or refrigerate until ready to serve.
