Ingredients
  

For the Base
  • 1 medium cabbage sliced into wedges
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Sauce
  • 1 cup tomatoes chopped, canned or fresh
  • 1 cup vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon cumin
For the Garnish
  • 1 tablespoon fresh parsley chopped

Method
 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and red pepper flakes, cooking for another minute.
  4. Add the sliced cabbage, salt, and black pepper, stirring to combine.
  5. Pour in the chopped tomatoes, vegetable broth, tomato paste, paprika, and cumin.
  6. Bring the mixture to a simmer, then cover and reduce the heat to low.
  7. Cook for 30-35 minutes, or until the cabbage is tender.
  8. Serve hot, garnished with chopped parsley.
