Ingredients
  

For the Base
  • 2 cups cooked chicken breast shredded
  • 4 cups mixed salad greens
  • 1 cup red cabbage shredded
  • 1 cup carrots julienned
For the Dressing
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon lime juice freshly squeezed
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh ginger grated
  • 1 clove garlic minced
For the Topping
  • 1/4 cup cilantro chopped
  • 1/4 cup peanuts chopped

Method
 

  1. In a large bowl, combine the shredded chicken, mixed salad greens, red cabbage, and carrots.
  2. In a separate bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, ginger, and garlic until smooth.
  3. Pour the dressing over the salad and toss until all ingredients are well coated.
  4. Divide the salad into serving plates.
  5. Garnish with chopped cilantro and peanuts on top.
