Prepare the Pastry Base
- In a large bowl, whisk together flour, sugar, and salt.
- Add the cold cubed butter and mix until the mixture resembles coarse crumbs.
- Stir in ice water, a tablespoon at a time, until the dough comes together.
- Shape the dough into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
Make the Cream Cheese Filling
- In a medium bowl, beat the softened cream cheese until smooth.
- Add powdered sugar, vanilla extract, and beaten egg. Mix until well combined.
Prepare the Blueberry Topping
- In a small saucepan, combine fresh blueberries, sugar, and lemon juice.
- Cook over medium heat until the blueberries break down and the mixture thickens, about 5-7 minutes.
Assemble the Danish
- Preheat the oven to 375°F (190°C).
- Roll out the chilled pastry dough on a floured surface to about 1/4 inch thick.
- Cut the dough into rectangles and place on a parchment-lined baking sheet.
- Spoon cream cheese filling onto the center of each rectangle.
- Swirl the blueberry topping over the cream cheese filling.
Bake the Danish
- Bake in the preheated oven for 20-25 minutes, or until golden brown.
- Remove from oven and allow to cool slightly before serving.
