Ingredients
  

For the Apple Filling
  • 3 medium apples peeled, cored, and diced
  • 1 tablespoon lemon juice
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
For the Cheesecake Filling
  • 8 ounces cream cheese softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
For the Dough
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup cold butter cubed
  • 1/4 cup ice water
For Frying
  • 2 cups oil for frying

Method
 

Prepare the Apple Filling
  1. In a bowl, combine diced apples with lemon juice, brown sugar, cinnamon, and vanilla extract. Mix well and set aside.
  2. Cook the apple mixture in a skillet over medium heat for about 5 minutes until slightly softened. Remove from heat and let cool.
Make the Cheesecake Filling
  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Add sugar, vanilla extract, and egg. Mix until well combined and creamy.
Prepare the Dough
  1. In a large bowl, mix flour, salt, and sugar together.
  2. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Stir in ice water, a tablespoon at a time, until the dough comes together. Form into a disk and refrigerate for 15 minutes.
Assemble the Pies
  1. Roll out the dough on a floured surface to about 1/8 inch thickness. Cut into circles using a cookie cutter.
  2. Place a spoonful of cheesecake filling and a spoonful of apple filling in the center of each circle.
  3. Fold the dough over to create a half-moon shape and seal the edges with a fork.
Fry the Pies
  1. Heat oil in a deep skillet over medium heat.
  2. Fry the stuffed pies in batches for about 3-4 minutes on each side or until golden brown.
  3. Remove from oil and let drain on paper towels.
Serve
  1. Allow the pies to cool slightly before serving. Optionally, dust with powdered sugar before serving.

Notes
