Ingredients

  • 1 pound chicken thighs boneless, skinless
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
For the Sauce
  • 1 cup pineapple juice
  • 1/4 cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon ginger grated
  • 2 cloves garlic minced
  • 1 teaspoon red pepper flakes optional
For Garnish
  • 1/4 cup green onions sliced
  • 1/4 cup sesame seeds toasted

Method
 

Prepare the Chicken
  1. In a bowl, combine the chicken thighs, soy sauce, and cornstarch. Mix well to coat the chicken.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes.
Make the Sauce
  1. In a separate bowl, whisk together the pineapple juice, brown sugar, rice vinegar, ginger, garlic, and red pepper flakes.
  2. Pour the sauce over the cooked chicken in the skillet. Stir to combine.
Cook the Chicken in Sauce
  1. Reduce heat to medium and let the chicken simmer in the sauce for about 10 minutes, or until the sauce thickens.
  2. Stir occasionally to ensure the chicken is well coated in the sauce.
Garnish and Serve
  1. Remove the skillet from heat and garnish the chicken with sliced green onions and toasted sesame seeds.
  2. Serve hot with steamed rice or noodles.
