Ingredients
  

For the Base
  • 1 pound chicken breasts boneless and skinless
  • 1 cup long-grain white rice uncooked
  • 2 cups chicken broth low sodium
  • 1 can black beans rinsed and drained
  • 1 cup corn frozen or canned
  • 1 cup salsa your favorite variety
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
For the Garnish
  • 1/2 cup cheddar cheese shredded
  • 1/4 cup cilantro fresh, chopped

Method
 

  1. Place the chicken breasts at the bottom of the crock pot.
  2. Add the uncooked rice, chicken broth, black beans, corn, and salsa on top of the chicken.
  3. Sprinkle cumin, chili powder, garlic powder, onion powder, salt, and black pepper evenly over the mixture.
  4. Cover the crock pot with the lid and cook on low for 6 hours or high for 3 hours.
  5. After cooking, shred the chicken with two forks and stir everything together.
  6. Serve the chicken and rice mixture in bowls, garnished with cheddar cheese, chopped cilantro, and a lime wedge.
