Ingredients
  

For the Base
  • 1.5 pounds chicken breasts boneless and skinless
  • 1 cup chicken broth low sodium
  • 1 tablespoon soy sauce low sodium
  • 1 tablespoon cornstarch to thicken
For the Vegetables
  • 4 cups broccoli florets fresh or frozen
  • 1 medium carrot sliced
For the Sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated

Method
 

Prepare the Chicken
  1. Place the chicken breasts in the slow cooker.
  2. In a bowl, mix chicken broth, soy sauce, hoisin sauce, sesame oil, garlic, ginger, and cornstarch.
Combine Ingredients
  1. Pour the sauce over the chicken in the slow cooker.
  2. Add the sliced carrots and stir gently to combine.
Cook the Chicken
  1. Cover and cook on low for 4 hours or until the chicken is tender.
Add the Broccoli
  1. During the last 30 minutes of cooking, add broccoli florets to the slow cooker.
  2. Stir gently to ensure the broccoli is coated with the sauce.
Serve
  1. Once cooked, shred the chicken using two forks and mix well with the sauce.
  2. Serve hot, garnished with sesame seeds if desired.
