Ingredients
  

For the Potatoes
  • 2 pounds Idaho potatoes cut into wedges
  • 4 cloves garlic whole cloves
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the Idaho potatoes thoroughly. Cut them into wedges.
  3. In a large mixing bowl, combine the potato wedges, whole garlic cloves, olive oil, salt, and black pepper. Toss until the potatoes are well-coated.
  4. Spread the potato mixture evenly on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for about 30-35 minutes, turning halfway through, until the potatoes are golden brown and tender.
  6. Remove from the oven and let cool for a few minutes. Squeeze the roasted garlic out of the skins and mash it into the potatoes.
  7. Garnish with chopped fresh parsley before serving.

Notes
