Method
Preparing the Potatoes
- Preheat the oven to 400°F (200°C).
- Wash the russet potatoes thoroughly and pierce them with a fork several times.
- Rub the potatoes with olive oil and sprinkle with sea salt.
Baking the Potatoes
- Place the potatoes directly on the oven rack and bake for 45 minutes, or until tender.
- Remove the potatoes from the oven and let them cool for about 10 minutes.
Preparing the Skins
- Once the potatoes are cool enough to handle, cut them in half lengthwise and scoop out most of the flesh, leaving a small border.
- Brush the inside of each potato half with olive oil and sprinkle with salt.
Baking the Skins
- Place the potato halves skin-side down on a baking sheet.
- Bake for an additional 10-15 minutes until the skins are crispy.
Adding the Toppings
- Remove the potato skins from the oven and fill each half with shredded cheddar cheese and crumbled bacon.
- Return to the oven and bake for another 5-7 minutes until the cheese is melted and bubbly.
Serving
- Remove from the oven and top with sliced green onions and a dollop of sour cream.
- Serve immediately and enjoy your delicious potato skins!
