Method
- Heat olive oil in a large skillet over medium heat.
- Add the sliced mushrooms to the skillet and sauté for about 4-5 minutes until they are tender.
- Push the mushrooms to one side of the skillet and add the shrimp to the other side.
- Cook the shrimp for about 2-3 minutes on each side until they are pink and opaque.
- Once the shrimp are cooked, add the pesto to the skillet and stir everything together until well coated.
- Remove from heat and garnish with fresh basil and grated parmesan cheese.
- Serve immediately over pasta, rice, or on its own.
