Preparing the Cookie Dough
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the peanut butter and brown sugar. Mix until well blended.
- Add the egg and vanilla extract to the bowl, mixing until fully incorporated.
- In a separate bowl, combine the rolled oats, baking powder, and salt.
- Gradually add the dry ingredients to the peanut butter mixture, stirring until just combined.
- Fold in the chocolate chips evenly throughout the dough.
Baking the Cookies
- Drop tablespoon-sized balls of dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
