Ingredients
  

For the Cookies
  • 2 cups all-purpose flour sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
For the Peach Ice Cream
  • 4 cups fresh peaches peeled and pureed
  • 1 cup heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Method
 

Prepare the Cookies
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a separate large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoons of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
  7. Bake for 10-12 minutes, until the edges are golden. Remove from the oven and let cool on a wire rack.
Make the Peach Ice Cream
  1. In a blender, combine the pureed peaches, heavy cream, whole milk, granulated sugar, vanilla extract, and lemon juice.
  2. Blend until smooth and well mixed.
  3. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
  4. Transfer the churned ice cream to a container and freeze for at least 2 hours to firm up.
Assemble the Sandwiches
  1. Take one cookie and place a scoop of the peach ice cream on the flat side.
  2. Top with another cookie, flat side down, and gently press together.
  3. Repeat with the remaining cookies and ice cream.
  4. Serve immediately or freeze the sandwiches for later enjoyment.

Notes

For best results, use ripe peaches for the ice cream. You can also substitute other fruits for a different flavor.
