Prepare the Cookies
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a separate large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop tablespoons of dough onto a baking sheet lined with parchment paper, spacing them 2 inches apart.
- Bake for 10-12 minutes, until the edges are golden. Remove from the oven and let cool on a wire rack.
Make the Peach Ice Cream
- In a blender, combine the pureed peaches, heavy cream, whole milk, granulated sugar, vanilla extract, and lemon juice.
- Blend until smooth and well mixed.
- Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
- Transfer the churned ice cream to a container and freeze for at least 2 hours to firm up.
Assemble the Sandwiches
- Take one cookie and place a scoop of the peach ice cream on the flat side.
- Top with another cookie, flat side down, and gently press together.
- Repeat with the remaining cookies and ice cream.
- Serve immediately or freeze the sandwiches for later enjoyment.
