Ingredients
  

For the Base
  • 2 cups fresh peas blanched
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup red bell pepper diced
For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the Garnish
  • 1/4 cup feta cheese crumbled
  • 2 tablespoons fresh parsley chopped

Method
 

  1. In a large bowl, combine the blanched peas, cherry tomatoes, cucumber, and red bell pepper.
  2. In a separate small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper until well combined.
  3. Pour the dressing over the vegetable mixture and gently toss to coat all the ingredients evenly.
  4. Let the salad sit for about 5 minutes to allow the flavors to meld.
  5. Before serving, sprinkle the crumbled feta cheese and chopped parsley over the top.
  6. Serve chilled or at room temperature.
