Ingredients
  

For the Base
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts cut into bite-sized pieces
  • 3 cups chicken broth low-sodium
  • 12 ounces fettuccine pasta
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
For the Topping
  • 1 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped

Method
 

  1. In a large pot, heat the olive oil over medium heat. Add the chicken pieces and cook until browned, about 5-7 minutes.
  2. Add the chicken broth, fettuccine pasta, garlic powder, and Italian seasoning to the pot. Stir to combine.
  3. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Cook for about 12-15 minutes, or until the pasta is tender.
  4. Once the pasta is cooked, stir in the heavy cream and half of the grated Parmesan cheese. Mix until the cheese is melted and the sauce is creamy.
  5. Remove from heat and let sit for a few minutes to thicken slightly.
  6. Serve the pasta topped with the remaining Parmesan cheese and chopped parsley.
