Bake the Cake
- Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large mixing bowl, whisk together the flour, sugar, poppy seeds, baking powder, and salt.
- In another bowl, cream the softened butter until light and fluffy, then add the eggs one at a time, mixing well after each addition.
- Mix in the buttermilk, lemon zest, and lemon juice until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Prepare the Glaze
- While the cake is baking, prepare the glaze by mixing the powdered sugar with the lemon juice until smooth.
- Once the cake is done, allow it to cool in the pan for 10 minutes before transferring it to a wire rack.
- Drizzle the glaze over the warm cake and let it set before slicing.
