Ingredients
  

For the Pasta
  • 12 ounces rigatoni pasta
  • 1 tablespoon olive oil for cooking sausage
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 pound Italian sausage casings removed
  • 1 can crushed tomatoes 28 ounces
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes optional for spice
  • Salt to taste
  • Pepper to taste
For the Garnish
  • 1/4 cup fresh basil chopped
  • 1/2 cup parmesan cheese grated

Method
 

Cooking the Pasta and Sauce
  1. Bring a large pot of salted water to a boil. Add the rigatoni pasta and cook according to package instructions until al dente, about 10-12 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add minced garlic to the skillet and sauté for an additional minute until fragrant.
  4. Add the Italian sausage to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  5. Stir in the crushed tomatoes, oregano, basil, and red pepper flakes. Season with salt and pepper to taste. Simmer the sauce for about 10 minutes.
  6. Drain the cooked rigatoni and add it to the sauce. Toss to coat the pasta evenly with the sauce.
Serving
  1. Serve the pasta warm, garnished with chopped fresh basil and grated parmesan cheese.
