  • 1 pound chicken breast cut into bite-sized pieces
  • 2 cups mixed bell peppers sliced
  • 1 cup broccoli florets
  • 3 tablespoons soy sauce low sodium
For the Cashew Sauce
  • 1/2 cup cashews raw or roasted unsalted
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger grated
For Garnish
  • 2 green onions green onions chopped
  • 1 tablespoon sesame seeds

Method
 

Prepare the Ingredients
  1. Gather all ingredients and prepare them as noted.
  2. In a small bowl, mix the cashews, honey, rice vinegar, and grated ginger to create the sauce.
Cook the Chicken
  1. Heat a large skillet or wok over medium-high heat and add a splash of oil.
  2. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
Stir Fry the Vegetables
  1. Add the sliced bell peppers and broccoli to the skillet with the chicken.
  2. Stir-fry for another 5 minutes until the vegetables are tender-crisp.
Combine with Sauce
  1. Pour the cashew sauce over the chicken and vegetables, stirring to coat evenly.
  2. Cook for an additional 2-3 minutes until everything is heated through.
Serve
  1. Remove from heat and garnish with chopped green onions and sesame seeds.
  2. Serve hot over cooked rice or noodles if desired.
