Ingredients
  

For the Base
  • 1 pound ground beef preferably lean
  • 2 medium sweet potatoes peeled and diced
  • 2 medium zucchini diced
  • 1 medium onion diced
  • 2 cloves garlic minced
For the Seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste
For Garnish
  • 1/4 cup fresh parsley chopped

Method
 

Cooking the Skillet
  1. In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Add the diced onion and minced garlic to the skillet, sautéing for an additional 3-4 minutes until the onion is translucent.
  3. Stir in the diced sweet potatoes, smoked paprika, oregano, salt, and pepper. Cook for about 10 minutes, stirring occasionally.
  4. Add the diced zucchini to the skillet and continue cooking for another 5-7 minutes until all the vegetables are tender.
  5. Taste and adjust seasoning if necessary.
  6. Remove from heat and garnish with fresh parsley before serving.
