Ingredients
  

For the Base
  • 1 pound ground beef preferably lean
  • 2 medium zucchini sliced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon olive oil
For the Seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup chicken broth or beef broth
  • 1 tablespoon soy sauce
For Garnish
  • 1/4 cup fresh parsley chopped

Method
 

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, and sauté for 2-3 minutes until softened.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, about 5-7 minutes.
  4. Stir in the sliced zucchini, salt, pepper, and Italian seasoning. Cook for another 5 minutes, stirring occasionally.
  5. Pour in the chicken broth and soy sauce, and bring the mixture to a gentle simmer.
  6. Let it cook for an additional 5 minutes, or until the zucchini is tender and the liquid has reduced slightly.
  7. Remove from heat and garnish with chopped parsley before serving.
