Method
Marinate the Hens
- In a large bowl, whisk together olive oil, rosemary, thyme, garlic, salt, and black pepper.
- Add the Cornish hens to the bowl, making sure they are well coated in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
Prepare the Grill
- Preheat your grill to medium-high heat (about 375°F/190°C).
- Oil the grill grates to prevent sticking.
Grill the Hens
- Remove the hens from the marinade and allow excess marinade to drip off.
- Place the hens on the grill, breast side down. Grill for about 20 minutes.
- Flip the hens and continue grilling for another 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
Rest and Serve
- Remove the hens from the grill and let them rest for 5-10 minutes.
- Serve with lemon wedges and a side of mixed greens.
