Ingredients
  

For the Marinade
  • 2 pounds flank steak trimmed
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 4 cloves garlic minced
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Toppings
  • 1 cup cilantro chopped
  • 1 cup onion diced
  • 1 cup tomatoes diced
  • 8 small corn tortillas

Method
 

Marinate the Steak
  1. In a bowl, whisk together olive oil, lime juice, garlic, cumin, chili powder, salt, and black pepper.
  2. Place the flank steak in a large resealable bag and pour the marinade over it. Seal the bag and refrigerate for at least 30 minutes, or up to 4 hours.
Grill the Steak
  1. Preheat the grill to medium-high heat.
  2. Remove the steak from the marinade and discard the marinade.
  3. Grill the steak for about 6-7 minutes on each side for medium-rare, or until your desired doneness is reached.
Prepare the Toppings
  1. While the steak is grilling, prepare the toppings by chopping cilantro, dicing onion, and tomatoes.
  2. Warm the corn tortillas on the grill for about 1-2 minutes until they are pliable.
Serve
  1. Remove the steak from the grill and let it rest for 5 minutes before slicing against the grain.
  2. Serve the sliced carne asada with warm tortillas and your choice of toppings.
