Prepare the Base
- In a bowl, combine chocolate cookie crumbs and melted butter. Mix until the crumbs are well-coated.
- Press the mixture firmly into the bottom of a 9-inch pie pan to form an even crust.
- Chill the crust in the refrigerator for at least 30 minutes to set.
Make the Filling
- In a mixing bowl, whip the chilled heavy cream until stiff peaks form.
- In another bowl, combine the sweetened condensed milk, green creme de menthe, green crème de cacao, and vanilla extract. Mix until smooth.
- Gently fold the whipped cream into the mint mixture until fully combined.
Assemble the Pie
- Pour the filling into the chilled chocolate cookie crust, spreading it evenly.
- Cover the pie with plastic wrap and refrigerate for at least 2 hours, or until set.
Add the Topping
- Once set, spread whipped cream over the top of the pie.
- Sprinkle chocolate shavings on top for garnish.
Serve
- Slice the pie into wedges and serve chilled.
