Ingredients
  

For the Base
  • 2 cups chocolate cookie crumbs
  • 1/2 cup unsalted butter melted
For the Filling
  • 1 cup heavy cream chilled
  • 1 cup sweetened condensed milk
  • 1/2 cup green creme de menthe
  • 1/4 cup green crème de cacao
  • 1 teaspoon vanilla extract
For the Topping
  • 1 cup whipped cream for topping
  • 2 tablespoons chocolate shavings for garnish

Method
 

Prepare the Base
  1. In a bowl, combine chocolate cookie crumbs and melted butter. Mix until the crumbs are well-coated.
  2. Press the mixture firmly into the bottom of a 9-inch pie pan to form an even crust.
  3. Chill the crust in the refrigerator for at least 30 minutes to set.
Make the Filling
  1. In a mixing bowl, whip the chilled heavy cream until stiff peaks form.
  2. In another bowl, combine the sweetened condensed milk, green creme de menthe, green crème de cacao, and vanilla extract. Mix until smooth.
  3. Gently fold the whipped cream into the mint mixture until fully combined.
Assemble the Pie
  1. Pour the filling into the chilled chocolate cookie crust, spreading it evenly.
  2. Cover the pie with plastic wrap and refrigerate for at least 2 hours, or until set.
Add the Topping
  1. Once set, spread whipped cream over the top of the pie.
  2. Sprinkle chocolate shavings on top for garnish.
Serve
  1. Slice the pie into wedges and serve chilled.
