Ingredients
  

For the Base
  • 1 cup cottage cheese preferably low-fat
  • 3 large eggs separated
  • 1 teaspoon baking powder
  • 1 pinch salt
For the Topping
  • 1 tablespoon fresh herbs such as chives or parsley, chopped

Method
 

Prepare the Mixture
  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese, egg yolks, baking powder, and salt. Mix until smooth.
Whip Egg Whites
  1. In a separate bowl, beat the egg whites with an electric mixer until stiff peaks form.
  2. Gently fold the whipped egg whites into the cottage cheese mixture, being careful not to deflate the whites.
Shape and Bake
  1. Spoon the mixture onto the prepared baking sheet, forming 8 small rounds.
  2. Bake in the preheated oven for 25 minutes, or until golden and firm to the touch.
Cool and Serve
  1. Remove the cloud bread from the oven and allow it to cool for a few minutes before transferring to a wire rack.
  2. Top with fresh herbs or serve as is. Enjoy your fluffy bread alternative!
