Ingredients
  

For the Base
  • 2 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
For the Topping
  • 1 cup feta cheese crumbled
  • 1/2 cup kalamata olives pitted and sliced
  • 1/4 cup parsley chopped
For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Prepare the Vegetables
  1. In a large bowl, combine the romaine lettuce, cherry tomatoes, cucumber, bell pepper, and red onion.
  2. Toss the vegetables together until well mixed.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, dijon mustard, minced garlic, salt, and black pepper until emulsified.
Combine Salad and Dressing
  1. Drizzle the dressing over the vegetable mixture and toss gently to coat.
Add Toppings
  1. Sprinkle the crumbled feta cheese, sliced kalamata olives, and chopped parsley on top of the salad.
  2. Give the salad a final gentle toss to combine all ingredients.
Serve
  1. Divide the salad into bowls and serve immediately.
