Crock Pot Creamy Chicken Parmesan Soup

Ingredients
  

For the Base
  • 1 pound boneless, skinless chicken breasts cut into chunks
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup onion chopped
  • 4 cups chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
For the Topping
  • 1 cup Parmesan cheese grated
  • 1/4 cup fresh parsley chopped

Method
 

Prepare the Base
  1. Place the chicken, carrots, celery, onion, chicken broth, garlic powder, and Italian seasoning into the crock pot.
  2. Cover and cook on low for 6 hours or high for 3 hours until the chicken is cooked through.
Shred the Chicken
  1. Once cooked, remove the chicken from the crock pot and shred it using two forks.
  2. Return the shredded chicken back to the soup.
Add Cream
  1. Stir in the heavy cream until well combined.
  2. Let the soup cook for an additional 15 minutes on low to heat through.
Serve
  1. Ladle the soup into bowls.
  2. Top each serving with grated Parmesan cheese and fresh parsley.

Notes
