Prepare the Stew
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic, sauté until the onion is translucent.
- Add the chicken pieces and cook until browned on all sides.
- Stir in the sliced carrots and celery, cooking for an additional 5 minutes.
- Pour in the chicken broth and bring to a simmer.
- Add the thyme, salt, and pepper, then cover and let it cook for 25 minutes.
- Stir in the heavy cream and let it simmer for another 10 minutes until thickened.
- Serve hot, garnished with fresh parsley.
