Ingredients
  

For the Stew Base
  • 1 pound boneless chicken breasts cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 3 carrots carrots sliced
  • 2 stalks celery sliced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
For Garnish
  • 1/4 cup fresh parsley chopped

Method
 

Prepare the Stew
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, sauté until the onion is translucent.
  3. Add the chicken pieces and cook until browned on all sides.
  4. Stir in the sliced carrots and celery, cooking for an additional 5 minutes.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the thyme, salt, and pepper, then cover and let it cook for 25 minutes.
  7. Stir in the heavy cream and let it simmer for another 10 minutes until thickened.
  8. Serve hot, garnished with fresh parsley.

Notes
