Method
Prepare the Pie Crust
- In a mixing bowl, combine the flour, sugar, and cold butter. Mix until crumbly.
- Stir in the egg yolk and add ice water, one tablespoon at a time, until the dough comes together.
- Form the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 350°F (175°C). Roll out the dough and place it in a pie dish.
- Prick the bottom with a fork and bake for 15 minutes or until golden brown. Let it cool.
Make the Chocolate Filling
- In a saucepan, whisk together the milk, sugar, cocoa powder, cornstarch, and salt over medium heat.
- Cook until the mixture thickens and begins to bubble, stirring constantly.
- Remove from heat, and stir in the butter and vanilla extract until smooth.
- Pour the chocolate filling into the cooled pie crust and let it cool to room temperature.
Prepare the Topping
- In a mixing bowl, whip the heavy cream with powdered sugar until stiff peaks form.
- Once the chocolate filling has set, layer the sliced bananas on top of the filling.
- Spread the whipped cream over the bananas evenly.
Chill and Serve
- Refrigerate the pie for at least 2 hours before serving to allow the flavors to meld.
- Slice and serve chilled, garnished with additional banana slices if desired.
