This Chicken Mole is a rich and flavorful dish featuring tender chicken simmered in a complex mole sauce made from a blend of spices, chocolate, and nuts, served with rice for a satisfying meal.

Ingredients
  

For the Mole Sauce
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons tomato paste
  • 2 cups chicken broth
  • 1 tablespoon cocoa powder
  • 1 teaspoon cinnamon
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 cup peanut butter
  • 1 tablespoon sugar
  • 1/4 cup chopped almonds toasted
  • 1 piece dark chocolate chopped, about 70% cacao
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
For the Chicken
  • 6 pieces chicken thighs bone-in, skin-on
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For Serving
  • 3 cups cooked rice for serving
  • 1/4 cup fresh cilantro chopped, for garnish
  • 1 lime lime wedges for serving

Method
 

Prepare the Mole Sauce
  1. Heat olive oil in a large saucepan over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the tomato paste and cook for 2 minutes, then add chicken broth, cocoa powder, cinnamon, cumin, and smoked paprika. Bring to a simmer.
  4. Stir in peanut butter, sugar, chopped almonds, chopped dark chocolate, salt, and black pepper. Simmer the sauce for 15-20 minutes, stirring occasionally.
Cook the Chicken
  1. Season chicken thighs with salt and pepper.
  2. In a large skillet, heat a little oil over medium-high heat. Add the chicken thighs, skin side down, and sear for about 5-7 minutes until golden brown.
  3. Flip the chicken and pour the mole sauce over the chicken in the skillet. Reduce heat to low.
  4. Cover and simmer for about 30-35 minutes or until the chicken is cooked through and tender.
Serve
  1. Remove chicken from the skillet and place it on a serving platter. Spoon mole sauce over the top.
  2. Serve with cooked rice, garnished with chopped cilantro and lime wedges on the side.

Notes
