Prepare the Mole Sauce
- Heat olive oil in a large saucepan over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and sauté for an additional minute until fragrant.
- Stir in the tomato paste and cook for 2 minutes, then add chicken broth, cocoa powder, cinnamon, cumin, and smoked paprika. Bring to a simmer.
- Stir in peanut butter, sugar, chopped almonds, chopped dark chocolate, salt, and black pepper. Simmer the sauce for 15-20 minutes, stirring occasionally.
Cook the Chicken
- Season chicken thighs with salt and pepper.
- In a large skillet, heat a little oil over medium-high heat. Add the chicken thighs, skin side down, and sear for about 5-7 minutes until golden brown.
- Flip the chicken and pour the mole sauce over the chicken in the skillet. Reduce heat to low.
- Cover and simmer for about 30-35 minutes or until the chicken is cooked through and tender.
Serve
- Remove chicken from the skillet and place it on a serving platter. Spoon mole sauce over the top.
- Serve with cooked rice, garnished with chopped cilantro and lime wedges on the side.
