Ingredients
  

For the Base
  • 1 pound boneless, skinless chicken breast cut into bite-sized pieces
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 cup spinach fresh
For the Gnocchi
  • 1 pound store-bought gnocchi
For Garnish
  • 1/4 cup parmesan cheese grated
  • 1 tablespoon fresh parsley chopped

Method
 

Cook the Chicken
  1. In a large pot, heat the olive oil over medium heat. Add the chicken pieces and cook until browned, about 5-7 minutes.
  2. Add minced garlic and Italian seasoning to the pot, cooking for an additional minute until fragrant.
Add the Broth and Cream
  1. Pour in the chicken broth and bring to a simmer.
  2. Stir in the heavy cream and let the mixture cook for about 10 minutes, allowing it to thicken slightly.
Cook the Gnocchi
  1. While the sauce is simmering, bring a separate pot of salted water to a boil.
  2. Add the gnocchi to the boiling water and cook according to package instructions, usually about 2-3 minutes until they float to the surface.
Combine and Finish
  1. Using a slotted spoon, transfer the cooked gnocchi into the pot with the chicken and sauce.
  2. Add the fresh spinach and stir until wilted and everything is well combined, cooking for another 2 minutes.
Serve
  1. Ladle the chicken gnocchi into bowls and garnish with grated parmesan cheese and chopped parsley before serving.
