Ingredients
  

For the Cookie Base
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
For the Cherry Cheesecake Ice Cream
  • 2 cups cream cheese softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup cherry pie filling

Method
 

Prepare the Cookie Base
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until fully combined.
  5. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until the edges are lightly golden. Let them cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Make the Cherry Cheesecake Ice Cream
  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Add the sour cream, granulated sugar, and vanilla extract, mixing until well combined.
  3. Gradually fold in the heavy cream until the mixture is smooth and creamy.
  4. Stir in the cherry pie filling, ensuring it's evenly distributed.
  5. Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft serve consistency.
  6. Transfer the ice cream to a lidded container and freeze for at least 4 hours until firm.
Assemble the Ice Cream Sandwiches
  1. Once the cookies are completely cooled and the ice cream is firm, scoop a generous amount of cherry cheesecake ice cream onto the flat side of one cookie.
  2. Top with another cookie, flat side down, pressing gently to create a sandwich. Repeat with remaining cookies and ice cream.
  3. Wrap each sandwich in plastic wrap and freeze for at least an hour to firm up before serving.
