Cheesy Beef Enchilada Tortellini

Ingredients
  

For the Base
  • 1 pound ground beef preferably lean
  • 2 cups cheese tortellini fresh or frozen
  • 1 cup enchilada sauce store-bought or homemade
  • 1 cup black beans canned, drained and rinsed
  • 1 cup corn canned or frozen
For the Topping
  • 1 cup shredded cheddar cheese or Mexican blend
  • 1/4 cup sour cream for serving
  • 1/4 cup chopped fresh cilantro for garnish

Method
 

Cook the Beef and Prepare Tortellini
  1. In a large skillet over medium heat, cook the ground beef until browned, about 7-10 minutes. Drain excess fat.
  2. While the beef is cooking, bring a pot of salted water to a boil and cook the tortellini according to package instructions. Drain and set aside.
Combine Ingredients
  1. Once the beef is cooked, add the black beans and corn to the skillet. Stir in the enchilada sauce and bring to a simmer for about 5 minutes.
  2. Gently fold the cooked tortellini into the beef mixture, ensuring the tortellini is well coated with the sauce.
Bake the Dish
  1. Preheat your oven to 375°F (190°C).
  2. Transfer the tortellini and beef mixture to a greased 9x13 inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
  3. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and let cool for a few minutes.
  2. Serve with a dollop of sour cream and a sprinkle of fresh cilantro on top.
