Ingredients
  

For the Filling
  • 1 pound ground beef 85% lean
  • 1 cup onion finely chopped
  • 1 cup cheddar cheese shredded
  • 1 can black beans drained and rinsed
  • 1 tablespoon taco seasoning
For the Burrito
  • 4 large flour tortillas
  • 1 cup sour cream for serving
  • 1 cup lettuce shredded

Method
 

Prepare the Filling
  1. In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes.
  2. Add the chopped onion and taco seasoning, stirring until the onion is soft and translucent, about 3-4 minutes.
  3. Stir in the black beans and half of the cheddar cheese, cooking until heated through.
Assemble the Burritos
  1. Warm the flour tortillas in a separate skillet or microwave until pliable.
  2. Spoon an equal amount of the beef filling onto each tortilla, then top with remaining cheddar cheese.
  3. Fold in the sides of the tortilla and roll it up from the bottom to form a burrito.
Serve
  1. Serve the burritos warm with sour cream, shredded lettuce, diced tomato, and sliced avocado on the side.
