Balsamic Cherry Mint Burrata

Ingredients
  

For the Base
  • 2 cups cherry tomatoes halved
  • 8 ounces burrata cheese
For the Topping
  • 1 cup fresh cherries pitted and halved
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 2 tablespoons fresh mint chopped

Method
 

Prepare the Cherry Topping
  1. In a small saucepan, combine the fresh cherries, balsamic vinegar, and honey.
  2. Cook over medium heat for about 5-7 minutes, stirring occasionally, until the cherries soften and the mixture thickens slightly.
Assemble the Dish
  1. While the cherry mixture is cooking, arrange the halved cherry tomatoes on a serving platter.
  2. Carefully place the burrata cheese in the center of the tomatoes.
Finish the Topping
  1. Remove the cherry mixture from heat and stir in the chopped mint.
  2. Spoon the warm cherry mixture over the burrata and tomatoes.
Serve
  1. Drizzle with additional balsamic glaze if desired, and serve immediately.
  2. Enjoy with crusty bread or on its own as a fresh appetizer.
