Ingredients
  

For the Trout
  • 4 fillets rainbow trout
  • 2 tablespoons olive oil for drizzling
  • 2 cloves garlic minced
  • 1 lemon lemon sliced
  • 1 teaspoon lemon pepper seasoning
  • 1 teaspoon salt to taste
  • 1 tablespoon fresh parsley chopped for garnish
For the Side
  • 2 cups asparagus trimmed
  • 1 tablespoon olive oil for drizzling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Trout
  1. Preheat the oven to 400°F (200°C).
  2. Place the rainbow trout fillets in a baking dish.
  3. Drizzle olive oil over the fillets and rub garlic, lemon pepper seasoning, and salt onto them.
  4. Lay lemon slices on top of the fillets.
Prepare the Asparagus
  1. In a separate bowl, toss the asparagus with olive oil, salt, and black pepper.
  2. Arrange the asparagus around the trout in the baking dish.
Bake the Dish
  1. Place the baking dish in the preheated oven.
  2. Bake for about 20 minutes or until the trout flakes easily with a fork and the asparagus is tender.
Serve
  1. Remove the baking dish from the oven and garnish the trout with fresh parsley.
  2. Serve warm, enjoying the trout with the roasted asparagus.
