Ingredients
  

For the Base
  • 1 sheet puff pastry thawed
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
For the Filling
  • 6 large eggs
  • 4 ounces prosciutto torn into pieces
  • 1 cup spinach fresh, chopped
  • 1 teaspoon black pepper freshly ground
For Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Base
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and fit it into a tart pan.
  3. Prick the bottom of the pastry with a fork and brush with olive oil.
  4. Sprinkle shredded mozzarella cheese evenly over the base.
Prepare the Filling
  1. In a large bowl, whisk together the eggs, salt, and black pepper.
  2. Stir in the chopped spinach and torn prosciutto.
Assemble the Tart
  1. Pour the egg mixture over the cheese in the tart shell.
  2. Gently shake the tart pan to ensure the filling settles evenly.
Bake the Tart
  1. Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the pastry is golden brown.
  2. Remove from the oven and let it cool for 5 minutes before slicing.
Serve
  1. Garnish with chopped fresh parsley before serving.
