Marinate the Chicken
- In a large bowl, combine chicken thighs, curry powder, garam masala, garlic, ginger, olive oil, salt, and black pepper. Mix well to coat the chicken evenly. Cover and let marinate for at least 15 minutes.
- Preheat the air fryer to 375°F (190°C).
Cook the Chicken
- Place the marinated chicken in the air fryer basket in a single layer. Cook for 15 minutes, shaking the basket halfway through for even cooking.
- Check that the chicken is cooked through (internal temperature should reach 165°F/74°C).
Prepare the Curry Sauce
- While the chicken is cooking, combine coconut milk, chopped tomatoes, and lime juice in a saucepan. Bring to a simmer over medium heat.
- Let the sauce cook for about 5-10 minutes, stirring occasionally until slightly thickened.
Combine Chicken and Sauce
- Once the chicken is done, remove it from the air fryer and chop it into bite-sized pieces.
- Add the chicken to the sauce and stir to combine. Allow to simmer for an additional 5 minutes to meld the flavors.
Serve
- Serve the chicken curry over cooked rice, garnished with chopped cilantro.
