  • 2 cups fresh broccoli florets
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 tsp turmeric
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the red lentils under cold water until it runs clear. Chop broccoli into bite-sized pieces.
  2. In a large pot, heat 1 tbsp of oil over medium heat. Add chopped onions and sauté until translucent.
  3. Stir in minced garlic and grated ginger; sauté for about one minute until fragrant.
  4. Add turmeric, cumin seeds, coriander seeds, salt, and pepper. Mix well before adding rinsed lentils.
  5. Pour in coconut milk and enough water or vegetable broth to cover by two inches; bring to a gentle boil.
  6. Once boiling, add broccoli florets and cook for an additional 5 minutes until tender but vibrant.
  7. Remove from heat and stir in fresh lemon juice before serving.
