  • 2 medium fresh beets (about 300g)
  • 1 cup walnuts (toasted)
  • 4 cups mixed greens (arugula and spinach)
  • 1/2 cup feta cheese (crumbled)
  • 3 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wrap beets in aluminum foil and roast for 45-60 minutes until fork-tender.
  2. While beets roast, spread walnuts on a baking sheet and toast in the oven for 8-10 minutes until golden brown.
  3. In a small bowl, whisk together balsamic vinegar, olive oil, honey or maple syrup, salt, and pepper.
  4. In a large bowl, layer mixed greens followed by crumbled feta.
  5. Once cooled, peel beets and slice into wedges or cubes. Add beets and walnuts to the greens.
  6. Drizzle dressing over salad and toss gently before serving.
