  • 1 lb lean ground beef
  • 1 oz taco seasoning (1 packet)
  • 1 cup salsa
  • 15 oz black beans, rinsed and drained (1 can)
  • 2 cups shredded cheddar cheese
  • 4 cups tortilla chips
  • ½ cup sour cream
  • ¼ cup chopped green onions
  • 1 cup shredded lettuce

Instructions

  1. Preheat oven to 350°F (175°C) and spray a 9×13 baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef until no longer pink. Stir in taco seasoning, salsa, and black beans; mix until heated through.
  3. Layer half of the tortilla chips in the baking dish, followed by half of the beef mixture and half of the cheddar cheese. Repeat with remaining ingredients.
  4. Cover with aluminum foil and bake for about 20 minutes. Remove foil and bake for an additional 5 minutes until cheese is bubbly.
  5. Let cool slightly before serving topped with sour cream, green onions, and shredded lettuce.
