  • 8 oz fideo noodles, broken into small pieces

  • 4 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp chili powder
  • Fresh cilantro, for garnish
  • Juice of 1 lime

Instructions

  1. Chop the onion and mince the garlic. Break fideo noodles into smaller pieces.
  2. Optional: Sear the chicken breasts in a skillet over medium heat until golden brown.
  3. In a slow cooker, layer the chicken (seared or raw), beans, onion, garlic, fideo noodles, spices, and pour broth on top.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  5. Shred the chicken in the pot with two forks and stir in lime juice and fresh cilantro before serving.
