Ingredients

Scale
  • 3 lbs chuck roast
  • 2 medium onions, chopped
  • 4 medium carrots, sliced
  • 2 lbs Yukon Gold potatoes, quartered
  • 2 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Season the chuck roast with salt and pepper, then sear on all sides until browned (about 4-5 minutes per side). Remove the roast and set aside.
  3. Add chopped onions, carrots, and minced garlic to the pot; sauté until onions are translucent (about 3-4 minutes).
  4. Deglaze the pot with beef broth, scraping up any browned bits from the bottom.
  5. Return the roast to the pot and add fresh herbs and potatoes. Ensure everything is well combined.
  6. Cover tightly and braise in the oven for 3-4 hours or until fork-tender.
