  • 1 medium onion, chopped
  • 1 cup green salsa (salsa verde)
  • 4 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 2 tbsp olive oil

Instructions

  1. Prepare all ingredients by chopping vegetables and roasting poblano peppers until charred.
  2. In a large pot over medium heat, add olive oil and sauté the chopped onion until translucent (about 5 minutes).
  3. Blend roasted poblano peppers, garlic, and green salsa until smooth.
  4. Add chicken thighs and blended sauce to the pot; pour in chicken broth to cover ingredients. Bring to a gentle simmer.
  5. Cook for 15-20 minutes until chicken is tender. Stir in hominy and simmer for an additional 10 minutes.
