  • 1 cup Greek yogurt (full-fat)
  • 2 tbsp lemon juice (freshly squeezed)
  • 4 garlic cloves (minced)
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • 1 cucumber (chopped)
  • 2 tomatoes (diced)
  • 1 small red onion (thinly sliced)
  • 4 pita breads (for serving)
  • For the Tzatziki Sauce:
  • 1 cup Greek yogurt
  • 1 cucumber (shredded)
  • 2 garlic cloves (minced)
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken by combining Greek yogurt, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. Add chicken breasts and let marinate for at least one hour in the fridge.
  2. Preheat grill or skillet over medium heat. Cook marinated chicken for about 6-7 minutes per side until fully cooked (internal temperature of at least 165Β°F).
  3. Prepare the tzatziki sauce by mixing shredded cucumber, Greek yogurt, minced garlic, lemon juice, dill, salt, and pepper in a bowl. Refrigerate until ready to serve.
  4. Chop cucumbers, tomatoes, and red onions into bite-sized pieces.
  5. Slice cooked chicken into strips and assemble bowls with rice or greens at the base topped with chicken and chopped veggies.
  6. Drizzle generously with tzatziki sauce and serve warm with pita bread.
