Instructions

  1. Rinse wild rice under cold water until clear; soak for one hour.
  2. In a large saucepan over medium heat, heat olive oil or butter. Sauté onion, carrots, and celery for about five minutes until tender.
  3. Add minced garlic; sauté for one more minute until fragrant.
  4. Stir in rinsed wild rice, vegetable broth, dried cranberries, salt, and pepper. Bring to a boil; reduce heat to low.
  5. Cover and simmer for about 45 minutes until the rice is tender and has absorbed the broth.
  6. Remove from heat, stir in slivered almonds, and fluff with a fork before serving.
