  • 3 tbsp creamy peanut butter
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 1 clove garlic, minced
  • 1 tsp honey or maple syrup
  • 1 red bell pepper, chopped
  • 1 carrot, sliced
  • 1 cucumber, diced
  • ¼ cup chopped peanuts (toasted)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread on the baking sheet and roast for 25-30 minutes until golden brown.
  3. In a bowl, whisk together peanut butter, soy sauce, lime juice, honey (or maple syrup), minced garlic, and a splash of water until smooth.
