  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Peel and slice sweet potatoes into thin rounds.
  2. In a skillet, heat olive oil over medium heat. Sauté onion until translucent; add garlic and cook until fragrant. Stir in spinach until wilted; season with salt and pepper.
  3. In a bowl, mix ricotta, eggs, Italian seasoning, salt, and pepper until smooth.
  4. In a greased baking dish, layer marinara sauce, sweet potato rounds, ricotta mixture, and sautéed spinach. Repeat layers until ingredients are used up.
  5. Cover with foil and bake for 30 minutes. Remove foil, top with mozzarella cheese, and bake uncovered for another 20-25 minutes or until bubbly.
