  • 2 cups fresh strawberries, chopped
  • 1 cup rhubarb stalks, diced
  • ¾ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 ½ cups all-purpose flour
  • 1 cup rolled oats
  • ½ cup unsalted butter, cold and cubed
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tbsp lemon juice
  • 1 tbsp cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking dish.
  2. In a bowl, combine strawberries, rhubarb, granulated sugar, lemon juice, and cornstarch. Mix well.
  3. In another bowl, whisk together flour, oats, brown sugar, baking powder, and salt. Cut in cold butter until crumbly.
  4. Press half of the mixture into the bottom of the baking dish. Spread the fruit filling over it and crumble the remaining mixture on top.
  5. Bake for 35-40 minutes until golden brown and bubbly. Allow to cool before cutting into squares.
