  • 2 cups long-grain rice
  • 2 cups low-sodium beef broth
  • 1 cup smoked cheddar cheese, shredded (divided)

  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, brown the ground beef until no pink remains. Drain excess fat.
  2. Stir in the chopped onion and minced garlic; sauté until the onion is translucent (about 3-4 minutes).
  3. Add the uncooked rice and pour in the beef broth; bring to a simmer and cook for about 15 minutes until liquid is mostly absorbed.
  4. Remove from heat and mix in sour cream and half of the smoked cheddar cheese until melted.
  5. Preheat oven to 350°F (175°C). Transfer mixture to a greased baking dish and top with remaining cheese.
  6. Bake for 20-25 minutes or until golden brown and bubbly on top.
