  • 4 boneless, skinless chicken breasts
  • 4 cups fresh spinach
  • 3 garlic cloves, minced
  • 2 tbsp lemon juice (about 1 lemon)
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Season chicken breasts with salt and pepper. Cook for 6-7 minutes on each side until browned and cooked through. Remove from skillet.
  3. Sauté minced garlic in the same skillet for about 30 seconds until fragrant. Add spinach and cook until wilted.
  4. Return chicken to the skillet; squeeze lemon juice over the top and pour in chicken broth. Scrape any bits off the bottom of the pan.
  5. Sprinkle with Parmesan cheese and simmer for an additional few minutes until melted.
  6. Serve warm, garnished with extra cheese if desired.
